Pan Fried Lamb Rack in Red Wine Sauce

• Ingredients for 10 pax

• lamb rack (140 gm per pax )
• lamb bones

• Lamb sauce
100 gm roasted lamb bones
500 ml meat stock
125 ml chicken stock
25gm carrots roughly out
1 no seeded tomato cut in four
5 gm garlic split across
10 gm shallots sloced
125 ml white wine
25 ml olive oil
15 gm tomato puree
1 spring rosemary / thyme
• Method

      Roast the bones until nicely golden, drain then add the vegetables, cook for 5 minutes. No colouring then add the tomato puree, cook for 5 minutes more, then deglaze with the white wine. Add the chicken stock reduce by 2/3, add the veal stock, simmer for approx.. 20 minutes then pass through a muslin lines sieve several times.
