Pan Fried Lamb Rack in Red Wine Sauce
• Ingredients for 10 pax
• lamb rack (140 gm per pax )
• lamb bones
• Lamb sauce

carrots roughly out |

seeded tomato cut in four |
| 5 gm |
garlic split across |
| 10 gm |
shallots sloced |
| 125 ml |
white wine |
| 25 ml |
olive oil |
| 15 gm |
tomato puree |
| 1 spring |
rosemary / thyme |
• Method
Roast the bones until nicely golden, drain then add the
vegetables, cook for 5 minutes. No colouring then add
the tomato puree, cook for 5 minutes more, then deglaze
with the white wine. Add the chicken stock reduce by
2/3, add the veal stock, simmer for approx.. 20 minutes
then pass through a muslin lines sieve several times.
